MoreFiber Vanilla
Ice Cream
Ingredients
1 can of Coconut Milk (13.5 oz which is about 13/4
cups)
1 cup Rice Milk, Soy Milk, Milk, or Cream
1/3 cup MoreFiber
1/3 cup Erythritol and/or Xylitol
1 teaspoon Vanilla extract
2 eggs, lightly beaten
Beat eggs in a large bowl. Heat 1 cup of the Rice,
Soy, Milk, or Cream or a combination of any of these
ingredients in a sauce pan until just bubbling, but
not boiling. Gradually add a lit bit of the heated
milk to the eggs while whisking. Keep adding milk
until all is mixed in. Pour the mixture back into
the sauce pan and heat until the mixture thickens
but does not come to a boil. The mixture should be
thick and coat the spoon.
Add the heated mixture to the Coconut milk. Whisk
to mix. Add the Vanilla extract. Mix Erythritol and/or
Xylitol together with the MoreFiber. Add to the liquid
and whisk until well mixed together. [Alternative:
Pour liquid, MoreFiber and Erythritol and/or Xylitol
into a blend and blend for a minute.]
Place mixture into a bowl and chill until cold.
Add mixture to an ice cream maker and process until
firm. Eat as a soft serve ice cream right away or
scoop into a contain and freeze until firm.
MoreFiber ice cream is an awesome treat. It is thick
and creamy. This frozen treat will satisfy you as
much as any premium ice cream but without all the
sugar. If you use rice milk, it will also be lower
in fat.
