These biscotti are packed with flavor. Crunchy satisfying texture or dip in coffee or milk for a more traditional way of eating these amazing cookies. The variations to making biscotti are endless.

Ingredients

  • 2 1/2 cups unbleached white flour
  • 1 cup MoreFiber
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Chopped toasted hazelnuts
  • 4 tablespoons Vegetable Oil
  • 1 tablespoon orange rind, grated
  • 1 teaspoon orange extract(optional for more intense orange flavor)
  • 1/4 cup orange juice(or substitute 4 tbs of Hazelnut and/or Orange liqueur)
  • 3 Tablespoons water
  • 2 eggs, lightly beaten

Chocolate Coating

  • 3 ounces bittersweet chocolate, finely chopped
  • 1 teaspoon Soymilk, milk or water
  • 1/2 teaspoon Orange extract
  • 1 tablespoon butter

Directions

Pre-heat Oven to 350 degrees.

Combine flour, MoreFiber, baking powder, baking soda and salt in a bowl.
Beat eggs in a bowl. Add oil, orange peel, orange juice to eggs.
Finely chop hazeluts. Mix the dry ingredient thoroughly by sifting or putting in a large covered jar and shaking rigourously. Place the flour mixture and chopped hazelnuts in a bowl. Add the liquid to the center of the flour mixture. Mix until a firm but moist ball forms (should be sticky to the touch, soft but firm..
Divide dough in half; coat with a little flour to make it easier to handle and shape each half into 10" x 5" x 1" flat log on floured surface. Lightly oil or silicon lined baking sheets. Place logs sheet.

Bake for about 30 min. Cool on baking sheets on racks for 10 min.
Slice diagonally into 1/2" thick slices. Place slices on cut side on baking sheets. Bake another 10 minutes. Remove baking sheets from oven; turn biscotti over. Bake another 10 minutes.

Cool biscotti on wire racks.

Chocolate Glaze: Combine chocolate and butter in small saucepan. Melt over low heat, stirring frequently, until smooth. Cool slightly. Dip cooled biscotti into chocolate mixture. Cool on wire rack.

Options

Coffee Biscotti substitue 1/4 cup Coffee liqueur for orange juice
Almond Biscotti substitue 1/4 cup Almaretto liqueur for orange juice and substitute 1 tsp almond extract and almonds for hazelnuts. No orange rind
Anise Biscotti substitue 1/4 cup Ouzo liqueur for orange juice and substitute 1 tsp anise extract and almonds for hazelnuts. No orange rind
Lemon Almond Biscotti substitue 1/4 cup Almaretto liqueur for orange juice and substitute 1 tsp lemon extract and almonds for hazelnuts. Substitute lemon rind for orange rind.

All of the above for a denser and harder biscotti, reduce don't add any water.

MisCotti(which stands for mistake)

While working on this recipe, we forgot to add baking powder, baking soda, and salt to the recipe. Wow! They turned out amazing. Much denser and very crunchy. Try them both.
