If you substitute rice or soy milk, you will have a fat reduced "light" ice cream. Not quite as rich but very satisfying.

Ingredients

  • 1 can of Coconut Milk (13.5 oz which is about 13/4 cups)
  • 1 cup Rice Milk, Soy Milk, Milk, or Cream
  • 1/3 cup MoreFiber or NuStevia Sweetener Stevia Baking Blend
  • 1/3 cup Erythritol and/or Xylitol
  • 1 teaspoon Vanilla extract
  • 2 eggs, lightly beaten

Directions

Beat eggs in a large bowl. Heat 1 cup of the Rice, Soy, Milk, or Cream or a combination of any of these ingredients in a sauce pan until just bubbling, but not boiling. Gradually add a lit bit of the heated milk to the eggs while whisking. Keep adding milk until all is mixed in. Pour the mixture back into the sauce pan and heat until the mixture thickens but does not come to a boil. The mixture should be thick and coat the spoon.

Add the heated mixture to the Coconut milk. Whisk to mix. Add the Vanilla extract. Mix Erythritol and/or Xylitol together with the MoreFiber. Add to the liquid and whisk until well mixed together. [Alternative: Pour liquid, MoreFiber and Erythritol and/or Xylitol into a blend and blend for a minute.]

Place mixture into a bowl and chill until cold.
