These muffins are always moist and with a very nice texture. The natural sweetness of the bananas complement the Stevia Baking Blend very well.

If you want more zing, add a couple of tablespoons of lemon juice, zest of 1/2 lemon and 1/2 tsp of baking soda to the recipe.

Yields 12 muffins

Ingredients

  • 1 3/4 cup Unbleached Flour
  • 1/4 cup MoreFiber or NuStevia Sweetener Stevia Baking Blend
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup milk, soymilk, or grain milk
  • 1/3 cup corn, canola, or other cooking oil
  • 1 cup mashed bananas (approximately 3-4 bananas
  • 2 large eggs
  • 1/2 cup finely chopped walnuts

Directions

  1. Preheat oven to 400 degrees
  2. Sift flour, Stevia Baking Blend, baking powder and salt in a large bowl
  3. Beat eggs
  4. Add milk and oil to beaten eggs
  5. Add egg mixture to the flour mixture
  6. Combine until ingredients are just mixed together. Do not overmix. Batter should be lumpy
  7. Fold in bananas and nuts
  8. Grease muffin tin with cooking spray, oil or butter or use paper muffin shells
  9. Bake for 20-25 minutes or until lightly brown. Test for done with cake tester or knive. Should come out with no sticky batter if done.
  10. Cool for 10 minutes and shake muffins gently from tin
