These muffins are always moist and with a very nice texture. The natural sweetness of the bananas complement the Stevia Baking Blend very well.
If you want more zing, add a couple of tablespoons of lemon juice, zest of 1/2 lemon and 1/2 tsp of baking soda to the recipe.

Ingredients
- 1 3/4 cup Unbleached Flour
- 1/4 cup MoreFiber or NuStevia Sweetener Stevia Baking Blend
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup milk, soymilk, or grain milk
- 1/3 cup corn, canola, or other cooking oil
- 1 cup mashed bananas (approximately 3-4 bananas
- 2 large eggs
- 1/2 cup finely chopped walnuts
Directions
- Preheat oven to 400 degrees
- Sift flour, Stevia Baking Blend, baking powder and salt in a large bowl
- Beat eggs
- Add milk and oil to beaten eggs
- Add egg mixture to the flour mixture
- Combine until ingredients are just mixed together. Do not overmix. Batter should be lumpy
- Fold in bananas and nuts
- Grease muffin tin with cooking spray, oil or butter or use paper muffin shells
- Bake for 20-25 minutes or until lightly brown. Test for done with cake tester or knive. Should come out with no sticky batter if done.
- Cool for 10 minutes and shake muffins gently from tin
