Ingredients

  • 1 cup of peanut butter ( your choice, creamy, or chunky )
  • 1 cup of NuNaturals NuStevia™ Baking Blend, or their MoreFiber™ Blend
  • 1 large egg
  • 1 teaspoon baking soda

Directions

  1. Preheat oven to 350 degrees & spray baking sheets with non-stick spray
  2. Beat everything together well
  3. Roll into small balls & put 1" apart on baking sheets. (Rita used 1 1/2" scoop to make 12 large cookies, you can use lesser portions for smaller cookies and get a yield of approx. 24 cookies.
  4. Flatten with fork in cross-hatch pattern.
  5. Sprinkle few crushed, peanuts, flax seeds, etc. on top. (Optional, but good).
  6. Bake larger cookies 11-13 minutes, smaller cookies 9-10 minutes. (Remember there's carryover cooking after removing from oven, therefore you may want to remove them when you think they're slightly underdone).
