Ingredients
- ·1/2cup egg substitute , or egg whites
· 1 cup pure pumpkin
· 1 jar of baby food pureed prunes
· 2/3 cup NuNaturals Nustevia™ Sweetener Baking Blend, or their MoreFiber™ Blend
· ½ cup whole wheat white flour
· ½ cup wheatbran
· ½ cup soy protein powder
· ½ cup soy flour
· 1 tsp. pure vanilla extract, ginger, baking powder, and baking soda
· 2 tsp. cinnamon
· ¼ tsp. salt
· (Optional, your choice, add raisins, or nuts)
Directions
Preheat oven to 300 degrees.
Mix the egg substitute, pumpkin, NuStevia Baking Blend, and prunes well.
Add in the rest of the ingredients and mix until combined.
Drop by rounded spoonsfuls on to an ungreased cookie sheet. Use the back of a fork to flatten the cookies.
Bake for 20 minutes.
