Extra rich banana bread with the addition of buttermilk. Lower fat content with the addition of applesauce. Combination of MoreFiber, Xylitol and Erythritol creates a great texture.

Ingredients

1/4 cup butter, softened to room temperature
1/4 cup Applesauce
1/2 cup MoreFiber
1/4 cup Erythritol
1/4 cup Xylitol
2 large eggs, beaten
11/2 cups mashed bananas (about 3 medium extra ripe bananas)
1 cup fresh buttermilk
1/2 cup walnuts, finely chopped
2-1/4 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder

Directions

1. Preheat oven to 350 degrees.
2. In a medium mixing bowl, cream the butter and sugar; add beaten eggs and mix well.
3. Stir in the fresh buttermilk and mix until fully incorporated.
4. In a separate large mixing bowl, sift together the flour, salt, baking soda and baking powder.
5. Add in the wet ingredients from the first bowl to the dry ingredients and mix well.
6. Stir in the mashed bananas.
7. Stir in the chopped walnuts.
8. Pour into a greased and 9" x 5" x 3 floured bread loaf pan.
9. Bake at 350 degrees for 1 hour.
10. Test for doneness after about 50 minutes. Put knife in center of loaf. If it comes out clean, it is done. You can judge how much longer it will take by how much much batter is on the knife when it comes out. If it is fairly clean check every 5 minutes until it comes out clean.

Lazy Guy Method.
1. Sift all flour, baking powder and baking soda.
2. Put all the other ingredients into blend except nuts.
3. Blend until mixed but don't overmix (about 20-30 seconds).
4. Add nuts and pulse a couple times until nuts are chopped into the liquid.
5. Add flour to blend and mix in with spoon or spatula.
Pour into a greased and 9" x 5" x 3 floured bread loaf pan.
6. Bake at 350 degrees for 1 hour.
7. Test for doneness after about 50 minutes. Put knife in center of loaf. If it comes out clean, it is done. You can judge how much longer it will take by how much much batter is on the knife when it comes out. If it is fairly clean check every 5 minutes until it comes out clean.
