Champagne Gelicious Shots

It's time to toast to the New Year, and there is no better way to do that than with our Champagne Gelicious Shots!


  • 2 1/2 tbsp Gelicious Unflavored Gelatin
  • 3/4 cup sparkling water
  • 4 tsp NuStevia Ginger Syrup (for stronger ginger flavor, add more to taste)
  • 1 cup Champagne 
  • 1/4 cup vodka 
  • 12 mini plastic cups


  • Spray plastic cups with non-stick spray. In a medium saucepan add sparkling water, NuStevia Ginger Syrup, and 1/4 cup of champagne. Stir well. Add Gelicious Unflavored Gelatin and let sit for a minute. 
  • Put the saucepan over low heat for 5 minutes and stir to ensure the gelatin dissolves. Once all of the gelatin is dissolved remove from heat and add remaining champagne and vodka. 
  • Pour into molds and put in refrigerator for at least 4 hours.
