  • 1 large ripe plantain (can use yellow or green, not quite ripe, banana instead) 
  • 3 large eggs 
  • 1 teaspoon vanilla bean powder 
  • 1/2 cup coconut butter
  • 2 tablespoons coconut milk 
  • 1 teaspoon apple cider vinegar 
  • 1/2 teaspoon NuStevia White Stevia Powder


  1. Preheat oven to 350 degrees. 
  2. Blend peeled plantain (or banana), eggs and coconut butter. 
  3. Add in apple cider vinegar, coconut milk, vanilla bean powder, and NuStevia White Stevia Powder.
  4. Blend. 
  5. Grease 6 inch pan. 
  6. Pour batter into pan. 
  7. Bake for 20-30 minutes.
  8. Cool and enjoy!

Other Variations for Sugar Free Cake

Many people can’t live without chocolate, and we don’t blame them. Luckily, you can give your cake an easy update. To turn this delicious vanilla cake into its chocolate counterpart, all you need to do is stir ¼ to ½ cup of NuNaturals Dutch Processed Cocoa Powder into the dry ingredients before combining them with the wet.
