This chocolate chia seed pudding is made with oat milk, chia seeds and NuNaturals Dutch Cocoa Powder. It is naturally sweetened with NuNaturals Vanilla Stevia and takes five minutes to prep. Chill overnight for a thick, creamy breakfast or healthy dessert.
Ingredients
- 1 1/2 cups unsweetened oat milk (or milk of choice)
- 3 tablespoons NuNaturals Dutch Cocoa Powder
- 1/2 teaspoon NuNaturals Vanilla Stevia (or to taste)
- Pinch of sea salt
- 1/3 cup chia seeds
- NuNaturals Cocoa Syrup (for topping, optional)
- 1/4 cup NuNaturals Collagen (Optional)
Directions
In a medium bowl or large mason jar, whisk together the almond milk, cocoa powder, vanilla stevia, sea salt, and chia seeds until the cocoa is completely dissolved.
Let the mixture sit for 5 minutes, then whisk again to break up any clumps.
Cover and refrigerate overnight, or for at least 6 hours, until thick and pudding-like.
Give the pudding a final stir before serving. If it's thicker than you'd like, stir in a splash of milk until it reaches your preferred consistency.
Divide between bowls or jars and top with a drizzle of cocoa syrup or your favorite fresh fruit or nuts.
Tips
- For an extra rich pudding: Replace 1/2 cup of the oat milk with canned coconut milk or heavy cream.
- For more protein: Stir in 1/4 cup collagen!
- Like it sweeter? Add a few more drops of stevia to taste.
Meal prep friendly: Store covered in the refrigerator for up to 5 days.
