These pina colada gummies are made with coconut milk, freeze dried pineapple powder and unflavored gelatin. They are sweetened with vanilla stevia for a tropical treat with no added sugar. Slice into 16 squares and keep in the fridge.

Ingredients

  • 1 cup coconut milk
  • 2 tablespoons gelatin
  • 1 tablespoon freeze dried pineapple powder
  • 1/2 teaspoon vanilla stevia (optional)

Directions

  1. Add 1/4 cup cold coconut milk into a bowl and sprinkle gelatin on top, let it sit for 5 minutes.
  2. In a small post, add the remaining 3/4 cup coconut milk and pineapple powder. Heat over medium-high heat and whisk to combine pineapple powder completely. Remove from heat as soon as it's combined, do not boil.
  3. Pour the hot coconut milk over the gelatin mixture and whisk together until all the clumps are dissolved. Add the stevia and whisk to combine completely.
  4. Transfer to a tupperware and referigerate for at least 6 hours or overnight.
  5. Cut into squares.
