Ingredients

1 1/2 cups whole milk

1/2 cup heavy whipping cream

4 ounces Baileys (optional)

2 teaspoons gelatin

3/4 teaspoon clear stevia

1/2 teaspoon peppermint extract

2-3 drops of natural yellow and blue food coloring (to make green)

Directions
In a small bowl add 1/2 cup of milk and sprinkle 1 tablespoon of gelatin over the top.
In a small pot add the remaining 1 cup of milk and the cream and heat until 140°F on a drink thermometer, or until warm to the touch. Do not boil.
Pour the warm milk mixture over the gelatin and whisk to combine completely.
Add in the whiskey and whisk to combine.
Cover with plastic wrap and press it against the pudding to prevent a film from forming.
Refrigerate overnight.
To serve, assemble pudding cups with whipped cream and a drizzle of chocolate mint syrup.
