Mashed Potatoes with Nutritional Yeast

Ingredients
- 2.5 pounds Russet potatoes
- 1/4 cup salted butter

1/4 cup
nutritional yeast (plus more for topping)
- 1/2 cup whole milk
- 1/4 cup creme fraiche (or sour cream)
- Salt and pepper to taste
Directions
- Peel the potatoes. Roughly chop into cubes.
- Add the potatoes to a 3-quart pot and fill three-quarters full with water. Put over medium/high heat and bring to a boil.
- Continue to cook the potatoes until soft when poked with a fork, about 15 minutes.
- Strain the water off the potatoes.
- Add in the butter, nutritional yeast, milk, and creme fraiche and mash with a potato masher until smooth.
- Add salt and pepper to taste.
- Serve with more nutritional yeast on top.
