Directions
- To make the orange layer: In a small pot, add the 4 cups water and bring to a boil.
- Slowly add in the 1/2 cup of gelatin while whisking the water the entire time to ensure the gelatin combines into the water.
- Remove from the heat and whisk in the 4 cups of orange juice. Add the stevia and whisk together.
- Lightly grease an 8-cup bundt pan with cooking spray. Wipe out any excess cooking spray with paper towel to ensure there are no puddles of cooking spray, just lightly coated.
- Transfer the orange layer to the bunt pan and chill in the fridge for at least 4 hours or until firm.
- To make the cream layer: Add 1 cup of water to a small pot and bring to a boil. Slowly whisk in the 2 tablespoons of gelatin until completely combined.
- Remove from the heat and whisk in the 1/2 cup of orange juice and heavy whipping cream. Then add the stevia and whisk together.
- Pour over the orange layer in the mold and return to fridge. Allow to chill overnight, or until firm.
- Remove the cake and cut into slices.
- Store in the fridge.
