Paleo Breakfast Cookies

Certified health coach, recipe developer, and long time friend of NuNaturals, Kat, created these delicious Paleo Breakfast Cookies. Remember as a child always just wanting cookies for breakfast, well now you can! These cookies are sweetened with our Monk Fruit Extract and are the perfect treat to start your day!


  • 2 1/2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 ripe bananas, mashed
  • 3 eggs
  • 1/2 cup tahini
  • 1/2 tbsp Lo Han Supreme Monk Fruit 
  • 1 tsp vanilla extract
  • 1/2 cup dairy free chocolate chips


  • Preheat oven to 350 degrees. Line a baking tray with parchment paper. In a large bowl, mix together the bananas, eggs, tahini, vanilla extract and  Monk Fruit until well blended. Stir in the almond flour, baking soda and baking powder until well combined. Add the chocolate chips and gently fold into the batter. Batter will be wet - that's ok! Scoop batter onto prepared baking tray using two tablespoons per cookie. Makes about 12-15 cookies. Bake for 10-12 minutes.
