These Champagne Jello Cocktails are a fun, sparkling twist on classic cocktails — light, festive, and made with just NuNaturals unflavored gelatin and your favorite bubbly. For a mocktail version, simply swap the champagne for sparkling apple cider. Serve them in martini glasses and top with fresh pomegranate arils for a gorgeous pop of color and a juicy finish.
Ingredients
- 2 cups champagne (or sparkling apple cider for mocktail)

Directions
- Bloom the gelatin: Add 1 cup of champagne to a small saucepan (off heat). Sprinkle NuNaturals Gelatin evenly over the top and let it sit for 5 minutes to bloom. The surface will look slightly wrinkled and absorbed.
- Heat until dissolved: Warm the saucepan over low heat, whisking gently until the gelatin fully dissolves. Do not boil — heat just enough to dissolve.
- Add the remaining champagne: Remove from heat and whisk in the remaining 1 cup champagne. This keeps the mixture bubbly and bright.
- Add pomegranates into martini glasses.
- Pour the champagne into the martini glasses. Cover with plastic wrap.
- Refrigerate for 3–4 hours, or until fully set.
- Garnish + serve: Sprinkle fresh pomegranate arils on top right before serving. Optional: a tiny twist of lemon zest or a rosemary sprig for holiday vibes.
Recipe Note
For a sweeter dessert-style cocktail, add 1–2 tablespoons of NuNaturals Simple Syrup or a few drops of vanilla stevia.
