No-Bake Keto Cinnamon Pecan Pumpkin Cheesecake Bites

These keto Pumpkin Cheesecake bites are the perfect bite-sized sweet treat for fall. These lil bites are infinitely easier than a traditional cheesecake! They come together in a few minutes and you don't need a springform pan - in fact, you don't even need an oven! 

Cheesecake Ingredients:

  • 8 ounces cream cheese, room temperature
  • 1/2 tsp NuNaturals Organic Stevia & Monk Fruit Sweetener
  • 1/2 dropper NuNaturals Vanilla Stevia
  • 2 tbsp pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1/3 cup pecans finely ground
  • 1/2 tsp NuNaturals Organic Stevia & Monk Fruit Sweetener
  • 1 tsp cinnamon

Keto Cinnamon Pecan Pumpkin Cheesecake Bites

Directions:

  1. Mix cream cheese, Stevia & Monk Fruit Sweetener, Vanilla Stevia, pumpkin puree, and pumpkin spice in a medium bowl until smooth.
  2. Allow mixture to harden in the refrigerator or freezer until you can form a firm ball.
  3. In a medium bowl, combine pecans, Stevia & Monkfruit Sweetener, and cinnamon then set aside.
  4. Once the mixture is firm enough, use your hands to form balls in the palms of your hands.
  5. Add the cream cheese balls one at a time to the coating mixture, covering completely. This should make approximately 15 cheesecake bites total. Let them firm up in the fridge until ready to serve (about 20 minutes).
