Ingredients
- 2 cups milk (dairy or unsweetened almond milk)
- 2 ripe bananas, mashed until smooth
-
2 tablespoons NuNaturals
Collagen Peptides
-
1½ teaspoons
NuNaturals Gelatin
-
35 drops
NuNaturals Monk Fruit Sweetener
- 1/4 teaspoon nutmeg (or cinnamon)
- Pinch of salt
- 1 teaspoon vanilla extract
Directions
- 1. Bloom the gelatin: In a small bowl, sprinkle the NuNaturals Gelatin over ¼ cup of the milk. Let it bloom for 5 minutes.
- 2. Heat the pudding base: In a medium saucepan over medium heat, combine the remaining milk, mashed bananas, NuNaturals Monk Fruit Sweetener, salt, and nutmeg. Whisk until smooth and warm, but do not boil.
- 3. Add collagen + gelatin: Whisk in the NuNaturals Collagen Peptides until fully dissolved. Add the bloomed gelatin and whisk continuously until completely melted and smooth.
- 4. Cook briefly: Continue cooking for 2–3 minutes, whisking, just until the pudding slightly thickens. Remove from heat. Then, add in the vanilla extract and stir to combine.
- 5. Chill to set: Pour into a large bowl and cover it with plastic wrap, pushing the plastic wrap directly onto the pudding to prevent a film from forming.
- 6. Whip to perfection: Once the pudding sets, it’s ready to serve. If you want it super smooth, you can whisk with a hand mixer to blend in any additional banana pieces (optional).
- 7. Serve with sugar free whipped cream and fresh banana slices.
