Healthy Thin Mints

Enjoy the taste of thin mints without the extra calories! This recipe for healthy and sugar free thin mints uses our very own NuStevia, Cocoa Powder and plenty of healthy fats and oils. Using sugar alternatives such as NuStevia and NuNaturals Cocoa Powder may help curb sugar cravings and control blood sugar. Go ahead: reach for the second, third or fourth thin mint (guiltlessly of course)! 

Bottom Layer Ingredients:

  • 1 cup chocolate protein powder
  • 1/2 cup NuNaturals cocoa powder
  • 1/2 cup almond flour (any nut flour will work)
  • 2 tsp vanilla extract
  • 1 1/2 tsp mint extract
  • 1 tsp liquid NuStevia 
  • 3/4 cup butter (or any butter alternative)
  • 2 Tbsp coconut oil
  • 1 cup raw chopped pecans

Directions: 

1.) Melt butter in a saucepan on low heat.

2.) Mix all of the ingredients together (except the chopped pecans).

3.) Add in the chopped pecans.

4.) Pour the dough onto a covered cookie sheet and flatten the dough until it's about 1/4 inch thick.

Top Layer Ingredients: 

  • 1/3 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp liquid NuStevia
  • 6 Tbsp NuNaturals cocoa powder

Directions: 

1.) Melt coconut oil in a saucepan on low heat.

2.) Add vanilla, NuStevia, and NuNaturals cocoa powder into the coconut oil. Stir until combined. 

3.) Pour mixture over the bottom layer.

4.) Cut into square pieces.

5.) Freeze for 20-30 minutes or until hardened.
